Fried Chicken with Garlic Toast and Salad
Fried Chicken is something that I have wanted to give a go for sometime now. From the various recipes out there I noted that buttermilk is the key ingredient and the overnight marinating or longer seals the deal. Getting buttermilk for some reason is hard! So for the short cut to buttermilk I mixed a tablespoon or two of lemon juice to some milk and used that instead.
Marinate the chicken pieces with herbs of your choice (I used Rosemary and Oregano), some Kashmiri Chili Powder, and sliced onions. Make sure the butter milk nicely coats of the pieces of chicken.
Mix together in a bowl some flour (1 cup or more as you will use this to coat the chicken) some five spice seasoning, ground black pepper, salt and a dash of paprika.
When ready to fry the chicken (make sure the oil is pipping hot). Drain the chicken pieces and coat generously in the flour and fry in the hot oil.
I served this with some garlic toast and potato salad. Enjoy!
