Sausage Peratel

Well I sure have taken my time to get back to this cooking blog and I have to say its going to be hard keeping this going as these days I have a helper who does most of the cooking and she is sooo good there is little need for Milee to cook!

When I do I will post here. So here is a simple fuss free sausage peratel that has an Indian influence, its got paprika but you may wish to go for the true indian chili powder if your taste buds can handle the heat.

I used freshly made sausages from the butcher so no casing and all. We had lamb, beef and chicken chopped, 1 big bombay onion sliced, 2-3 cloves of garlic smashed, 2 each red and green chilies sliced, spring onion chopped, freshly ground black pepper, paprika, some mixed herbs, curry leaves, salt and olive oil.

Just stir fry the onions, garlic and chilies in the olive oil till lightly golden, then add the sausages and give it a good fry before adding the paprika and black pepper. Then after about 6 minutes add the mixed herbs, curry leaves, salt and stir fry for 5 minutes. Add the spring onions and taste for salt. If you like you may sprinkle a little vinegar before removing from the heat.

This is great with some toasted bread or as is with some chilled beers!
