Pork Patties with Mash Potatoe
Having no energy to get to the wet market bright and early this morning, I settled on challenging myself to whip up lunch at 4pm with whatever I had on hand!! The result - Pork Patties and Mash.
Minced Pork (500g) mixed with two big boiled potatoes, salt, pepper, chopped red onion, 2 cloves of chopped garlic,some frozen peas, 3 chipatola sausages chopped, 2 green chilies sliced, 1/2 teaspoon each cumin, fennel powder and 1 teaspoon paprika powder and a bit of bread crumbs all hand mixed with some olive oil. Shape into patties, coat with egg and dip in crumbs before shallow frying.
Mash - 3 big potatoes boiled, and while its hot mash it with butter, salt, pepper and some cream.
White gravy - heat some butter and add 1 1/2 tablespoons of flour, on a low heat cook the flour well into a roux without burning it, then add some chicken stock and use a whisk to combine well. If its too salty add some heavy cream.
There you have it - lunch at 4pm:-)
