Roasted Pork Ribs




After refraining from meat during Lent, I thought roasted pork ribs would be a great way to welcome meat into our diets:)

I marinated the ribs with cumin and paprika, salt,pepper and Chinese 5 spice powder for about 3 hours then placed he ribs on a wire rack with some chicken stock in the bottom pan and roasted the ribs meat side down for 20 minutes. After 20 minutes I turned the ribs over and placed sliced lemons all over the ribs and continued to roast for 20 minutes, then I removed the lemon slices and basted the ribs with a mixture of tomato sauce, Tabasco and Chinese spare ribs sauce. Over the next 2 hours I continued to baste the ribs at 20 minute intervals.

We had the ribs with a side of Rosemary potatoes, roasted veggie and gravy. **Made the gravy from the chicken stock and drippings of the ribs. Pretty awesome way to welcome meat back into our diets!.
