Roasted Pork Ribs




After refraining from meat during Lent, I thought roasted pork ribs would be a great way to welcome meat into our diets:)

I marinated the ribs with cumin and paprika, salt,pepper and Chinese 5 spice powder for about 3 hours then placed he ribs on a wire rack with some chicken stock in the bottom pan and roasted the ribs meat side down for 20 minutes. After 20 minutes I turned the ribs over and placed sliced lemons all over the ribs and continued to roast for 20 minutes, then I removed the lemon slices and basted the ribs with a mixture of tomato sauce, Tabasco and Chinese spare ribs sauce. Over the next 2 hours I continued to baste the ribs at 20 minute intervals.

We had the ribs with a side of Rosemary potatoes, roasted veggie and gravy. **Made the gravy from the chicken stock and drippings of the ribs. Pretty awesome way to welcome meat back into our diets!.

after working 15 hours a day how do youfind time to cook such wonderful looking meals. must be the montana influence in your life. something besides my sense of humor has evidently rubbed off on you babi.lalalala fernando helped me type this
