Kuih Keria



This is a Malaysian doughnut of sorts - it is made from sweet potato.

I was very impatient and didn't really bother with the shape and all, but the taste was lovely.

2 medium sized orange sweet potato, washed and boiled till tender, then remove skin and mash.
1/2 cup plain flour and 1/2 teaspoon of bicarbonate soda (mix together) then add to the mashed sweet potato. You will need extra flour to bind and hold the shape in place, then fry in some oil till browned.

The idea is to then coat each doughnut in some melted sugar.

Lovely with a glass of tea, enjoy!
