Rocket with Breakfast Beef and Feta

This salad is best paired with any cold cut or if you have prosciutto. I used Breakfast Beef which worked out well.

I used a packet of rocket and added some mixed greens to balance the taste of the tangy pungent rocket.

Added some sliced red onion, avocado, cherry tomatoes and cucumber. Also some feta for added zing!

For the dressing I chopped some 5 pips of garlic and fresh parsley and added that to the juice of 1 1/2 lemons. To the mix I added some balsamic vinegar, a teaspoon of mustard, some cracked black pepper, salt sugar and olive oil. Gave all this a good shake in a vinaigrette bottle. Chilled the dressing and used it when we were ready to dig in.

This is a very refreshing salad (recommended for a really hot day). We had this with some brushetta on the side. Enjoy!
