This refreshing bean salad is great as a side dish to almost anything! You can use any beans you like and you can just about empty anything else you like in this salad. I used kidney beans, garbanzo and green beans. To that I added chopped parsley, tomatoes, avocados and a red onion. The dressing was a mixture of juice of one lime, olive oil, balsamic vinegar, cumin powder, salt and pepper. Really easy to prepare and very easy to eat!
