Brown Rice & Bacon Stuffed Tomatoes

Happy New Year to all fans of Milee's kitchen.
Madam's back in action thanks to a christmas gift (Panasonic Lumix woohoo!) from my Siri. The gift has resulted in me cooking almost every day....and actually enjoying it. Hmmm! Win win I suppose :-)

Enough talk; here's the grub we just had for Saturday lunch with grilled chicken chop and green salad.

Ingredients:
4 tomatoes or 2 red/yellow bell peppers
20g butter
2 spring onions (chopped)
2 rashers bacon (chopped)
1 clove garlic (crushed)
1 small onion (chopped)
1 cup cooked and chilled brown rice or 1 can corn kernels
1/3 cup breadcrumbs
1/4 cup grated cheese

Slice off about 2cm off the top of each tomato. scoop out tomato pulp carefully with teaspoon. Chop pulp finely.
If using bell peppers, slice them into half (horizontally). Scoop out and discard seeds.

Fry bacon and till crispy. Add butter, spring onions, garlic and onion and fry till fragrant.

Add rice, breadcrumbs, cheese and tomato pulp and cook till quite dry. Add pepper and salt to taste.

Spoon filling into tomatoes, stand tomatoes in ovenproof dish or muffin tin and bake in moderate oven for 20 mins.

Ohh how lovely those pictures look!!! I can just imagine how tasty the stuffed rice would have tasted! Welcome back Madam and just in time when I am way too busy to cook. When I get the time I am definitely trying this recipe out.
