Chicken Soup with Penne
I have been taking a break from cooking mainly for two reasons, we are on a diet and I am simply too tired after hectic days at work. Today I told myself lets do something simple and not too taxing and healthy enough by our standards. So I made our usual Chicken soup with Penne or you may use any type of pasta that you may have on hand.
Ingredients
1 whole chicken cut into 8 pieces
1 yellow onion diced
1 whole bulb of garlic
2 pieces of 1 inch ginger
2 bay leaves
Freshly ground white peppercorns
One cup of chicken stock
Celery sliced
Carrots
Sugar snap snowpeas
Cubed potatoes
Mushrooms
Spring Onions
Penne
Method
I used the pressure cooker, poured some oil and sauteed the chopped yellow onion, the whole bulb of garlic, 2 whole pieces of cleaned ginger and after 4 minutes I added the celery and stirred well. The chicken pieces were put in and left to brown for at least 5 minutes before I added the bay leaves and about 1 tablespoon of white pepper, then added enough water to cover the pieces and I put the lid on and let it boil for 30 minutes. After 30 minutes I removed the lid and took all the chicken pieces out and removed the bones, put all the meat back into the stock, added one cup of the stock and more water and followed with the carrots and potatoes, after 10 minutes add the spring onion and let it boil, add more white pepper and salt if needed, follow by adding the mushrooms and then the penne. Once the penne is cooked add in the sugar snap peas and let it boils for 5 minutes before removing from the fire.
This is a great soup for a cold day or when you are just not feeling your best. Enjoy.

Hi Madam..kitchen has reopened:-) But I am pondering closing it for a bit soon. BTW there is a REASON you are also an administrator for this blog u know...so get to work!

I knew i was going to kena back but I'm camera-less remember. If Milee's Kitchen decides to donate one I'll cook up a storm. In the meantime I'm on a long sabbatical. :-)
So the "excuse" is no camera huh....wat about your handphone camera?
