Pumpkin Pie


With Halloween just gone by I was yearning for some Pumpkin Pie, which would make some people go ewwwwwww....unfortunately this all Amercian pie has little following here in Malaysia...but I am an exception of course!!

2 cups of Pumpkin that has been boiled drained well and mashed
1/4 teaspoon each nutmeg, cinnamon, and ginger powder
2 eggs
3/4 cup of sugar
1 can Evaporated Milk
Dash of vanilla essence
Pinch of salt
1 ready made pie shell

Mix the sugar and the dry spices along with the salt in a bowl. Beat the 2 eggs and add the eggs to the sugar mixture along with the pumpkin and vanilla essence, gradually stir in the evaporated milk and fold in well. Pour the mixture into the pie shell and bake for 30-40 minutes until the pie sets well and is dry when tested with a toothpick.

Note : It is indescribably delicious with a dollop of whipped cream when serving but I didn't have any on hand. Picture quality is low as I used the handphone.
