Seafood Marinara


Made Bolognese and this Seafood Marinara last night as we were having a lunch do at the office before ramadhan begins tomorrow. Since it was to be consumed by Muslims as well I omitted using white wine and in place used the juice of 1 lemon, it made a good substitute!

Ingredients
Prawns, Squid, Mussels, any firm white fish (or any other seafood)
1 yellow onion diced
10 pips of garlic chopped
One bowl of chopped English parsley and 1/2 bowl of coriander
1 can of diced tomatoes
1 can of tomato puree
1 small can of tomato paste
1 tablespoon (or more) of dried Oregano
1 teaspoon of Paprika
Some butter and Olive oil
Salt & Pepper
Juice of 1 lemon
Black Olive slices - 1/4 cup

Method
Saute the onions and half the chopped garlic in some olive oil till fragrant, then add the oregano and paprika and stir before adding all the canned tomato sauces and combine well, leave on low simmer. In another pan, heat some butter and saute the remaining garlic then add the squid, prawns and stir a few minutes before adding the mussels and fish and keep stirring, the seafood will produce water so do not add any additional water. Add the juice of 1 lemon and stir before adding all the contents including the broth to the sauce mixture. Let it all gently simmer for less than 5 minutes and add the black olives, chopped parsley and coriander, taste for salt and pepper. Serve with your choice of pasta.
* If using wine, substitute where lemon juice was used.
