Prawn Masala




This recipe is courtesy of Delia. Its a spicy dish with thick gravy and taste even better after sitting in its gravy for sometime. I varied Delia's recipe by adding 1 tablespoon of Chili powder, 2 tomatoes and some sliced green chilies.

Ingredients
Large Prawns - 1 kilo

Fry with 1 teaspoon of oil and then blend with water:-
Thumb size ginger
10 small onions
25 pieces dried chilies
1 tablespoon black pepper
2 teaspoons coriander (seeds or powder)
1 teaspoon cumin
1 teaspoon fennel
1 cup scrapped coconut

To fry in some ghee:
1 big onion sliced
Curry leaves
1 Cinnamon, 2 star anise's, 4 cloves, 2 cardamon pods
4 green chillies sliced
2 tomatoes quartered
1 tablespoon chili powder

1 lime or some vinegar
Salt to taste

Method
Fry the cinnamon, star, cloves and cardamon till it pops and add the sliced big onion and curry leaves and green chilies. When aromatic add the tomatoes followed by the blended masala, add the 1 tablespoon of chili powder. Allow the masala to cook for some time (10 minutes or more) on a low heat, stirring often to avoid burning. If need be, add a little water at a time. Add the prawns and cook for a further 10 minutes while adding salt, lime/vinegar and water as required.
