Nasi Lemak



This version is my simple super fuss free version where I use store bought ground chili and despite that Joe whacked 2 rounds at lunch and dinner:-)

Ingredients
Ikan bilis (anchovies)- fried and kept aside (reserve a small portion for dressing the plate and reserve the oil for the sambal)
1 container of store bought ground chili
Eggs - boiled and shelled
Cucumber - cut into slices

Sambal
2 Red Onions ground with 2-3 inch fresh ginger, 5 pips of garlic and roasted belacan (shrimp paste)(about 2 inch piece) (add a bit of water to blend)

Assam (Tamarind) (about the size of a small marble mixed with 5 tablespoons of water)
If you want add you may substitute the assam with juice of about 5 small limes
Salt, Pepper and Sugar to taste

Rice
1 packet Coconut Milk to be used in place of water and add some salt and tie 2 pieces of daun pandan (screw pine leaves) into a knot and add it in the rice cooker.

Method
Fry the Onion blend in the reserved oil for a good 5-7 minutes then add the store bought ground chili and keep stirring and cooking the sambal for at least 10 minutes or more. After 10-12 minutes of cooking the sambal add the asam water/or lime juice and keep stirring, then add salt, sugar and pepper and adjust taste. (I added as much as 3 teaspoons of sugar because the sambal would have been too hot for Joe). Lastly add the fried ikan bilis and stir for 5 minutes before removing from the flame.

Serve with the rice, cucumber, boiled egg and fried ikan bilis on the side.

Thats the way aha aha..i like it aha aha!! Shylah but ground chili means i grind fresh chilis or dry chilis. I want to keep in my fridge.

Bunny, normally ground chili paste is dried chilies soaked for a while in hot water and then blended with a little water....if you don't have any dried chilies....try with fresh but it will have a different taste altogether

Kacang not everyone's fav, plus I didnt have any at home...I try to make do with what is available at home:-)
