Luncheon Meat Chili Fried


This is one of our favourite CANNED foods and really so easy to make. Its very versatile and the balance (if any) can be fried with rice and some scrambled egg and scallions to make a spicy Fried Rice or added to bread and toasted...mmmmmm so yummy!

Ingredients

1 can of Luncheon pork meat (chopped into cubes)
1 big onion (yellow) sliced
3 pips of garlic chopped
3 sliced lengthwise green chillies
a good handful of curry leaves
2-3 tablespoons of chili powder
salt and some roasted and ground black pepper



Method
Fry the onions, garlic and 1/2 the curry leaves in some oil till fragrant. Add the cubed luncheon meat and stir for 5 minutes while adding the black pepper generously. Then add the chili powder and stir well, add more oil if its too dry (do not add water!) keep stirring the meat and add in the remainder of the curry leaves and salt. Stir for a further 8-10 minutes before removing from the fire.
