Lunch at Merri's


We had a cookout at Merri's new apartment last Saturday and boy what a spread it turned out to be!! Unexpectedly pork made it to the menu that afternoon amongst many other mouth watering dishes (in particular Delia's sure-fire prawns which I will put up in a later blog post).

Kicap pork is a staple at mummy's place. The best thing about kicap pork is the addition of potatoes which melt in your fingers & mouth the moment it makes contact...ohh so divine!

Anyway here's a very quick and easy kicap pork recipe and being a true indian that I am you will note that I have added some dried chilis for that *kick*:-)

P/S : Very sorry about the quality of the picture, it was the handphone again, as we forgot to bring the camera along for the cook out!

Ingredients
Pork cut into bite sized cubes (with a bit of fat)
Marinate with : Thick kicap (Lots) and a couple of dashes of light kicap, a generous amount of sliced young ginger and some smashed garlic and generous amount of caorsely ground black pepper. Let that marinate for over 1/2 hour (the longer the better)

Onions - sliced
2-3 pips garlic sliced
Dried Chilies - about 10 (cut into smaller pieces)
More Thick Kicap
Potatoes - quartered
Salt & Vinegar
Oyster sauce (if you have)

In a pan, heat oil and add the onions and garlic and stir for 2-3 mins before adding the dried chilies. Keep stiring till aromatic and pour in the marinated meat & potaoes and some water to slightly cover the meat. Stir well and cover and leave to cook for 15 mins and stir every now and then. Remove cover after 15 mins and add water if level of water in the pan has reduced, taste for salt and add if necessary, put lid back on and cook for a further 15 mins, stiring occasionaly and then remove lid and let the gravy become thick and heavy that it coats the potatoes and meat. Add more thick kicap & oyster sauce (if using). Slice some 2-3 green chilis lengthwise and add to the meat and give it a few stirs before removing from the fire.

Note : Dun slice the meat too thick as it will take longer time to cook, its best to keep the cuts square but not thick.

Sounds like " food tasting ? " at Merri's...hmmm...something I missed huh ?...Not shy...not invited also...Kichap pork huh...guess if u did it...would be very hot n yummy!! Two thumbs up Milee..keep it up.

I was gone 2 weeks and this is all you serve me; kicap pork? Milee's kitchen closed for the holidays ah? :-P I know mine is so the Siri Nasi Lemak will have to wait. Sorry ah.

sorry madam I have been so busy on the weekends and yes the kitchen has been closed-( There is a likelyhood that the kitchen will re-open this weekend:-) Stay tuned! and quickly whip up that nasi lemak lah!
