Veggie Thoran

Ok lah I am going to sort of cheat here, I did not cook dinner last nite so I will post a recipe on Cabbage and Carrot Thoran, (the side veggie dish that is pictured in my previous post).

Thoran I am told is a Malyaalee style of preparing veggies with the star attraction being the scrapped coconut. Its not something that you will find at my mothers place unless she's feeling very Malyaalee....which is hardly ever but I like this dish especially when the veggies have not been cooked to death:-)no offence to those who cook veggies that way!

Ingredients:
Cabbage - shredded
Carrot - shredded
Small onions sliced
A few pips of garlic smashed and chopped
Some mustard seeds
Some cumin seeds
3-4 dry red chilies snipped in half/ or green chili's sliced in half
Curry leaves
Scrapped coconut - 1/2 cup
Turmeric powder
Salt

Heat oil and splutter the mustard and cumin and quickly add the onion and garlic. Then add the dry chili's and curry leaves and cabbage and carrot, give it a good stir and add the coconut and turmeric. Add salt and stir fry and you are done.

Note : Some indian aunties mix the coconut with the turmeric, salt, onion/garlic and some ginger and then add that mixture in with the cabbage.....you pick your favoured way...it will taste the same if you ask me.
This thoran can be used for most other veggie.

Verdict : One of my fav indian veggies however Joe does not fancy this dish.
