Omelette and 3 Bean Salad




Here is a protein packed simple dinner we had last night.

Omelette
Whisk 4 eggs and stir in the sliced fresh mushrooms, sliced Spring Onions, salt and pepper. In a little olive oil spread the egg mixture and once almost cooked add a few slices of mozzarella cheese turn over half the mixture and its done!

3 Bean Salad
1 can Butter Beans
1 can Black eyed beans
1 can pinto beans or any other beans you prefer
1 large red onion diced
1 can flaked tuna in water (drained)
1/2 yellow, green and red bell peppers
a good bunch of english parsley chopped
3 pips garlic diced
Italian Vineggrate
Salt & Pepper
Drain the beans and mix everything together and chill before serving.
