Spinach Fritters



This is a simple snack to make especially for tea or breakfast.

Combine some wheat flour with an egg, salt and 1 cube of anchovy stock (mashed up, some pounded garlic and mix well and add enough water for a thick dough. Add in spinach which has been sliced and mix well.

Heat a generous amount of oil in a deep pan, when very hot spoon the mixture into the oil and with a slotted spoon turn over and remove when golden brown. This is best eaten with some bottled chili sauce.

Note - you can add some chopped onions, sliced green chilies, prawns etc to the dough for variety! Enjoy
