Soy Sauce (Kicap) Chicken and Mixed Veggies




I served this to our relatives from London after they returned from their short trip to Langkawi.

1 whole chicken cut into small pieces and marinated for about an hour or more with light soya sauce, thick soya sauce, oyster sauce, chinese wine, roasted and pound black pepper and a few slices of young ginger;
1 yellow onion sliced
3-4 pips of garlic sliced
5 pieces of soaked dried mushroom sliced
A few pieces of dried chili snipped
Dash of vinegar

Method
Fry the onion and garlic in some oil till aromatic and then add the snipped dried chilies, stir a bit and follow with the marinated chicken. Stir well before adding some water to cover just above the chicken. Cover and let it cook covered for about 15-20 minutes. Remove cover and add mushrooms and keep stirring periodically for the next 15 minutes, taste for salt, pepper and add a dash of vinegar before removing from the fire.
