Roasted Veggies with Penne



This is courtesy of Halva who very sportingly shared her recipe after I left a comment on her blog. I decided to make this for lunch today thinking that Joe and I could do with the light meal after the continuous dinners and parties from Friday to last night. Anyway all I did was roast some zucchini, eggplant, red pepper, red onions and garlic with oregano, mixed spice, olive oil and some salt and pepper. I also added some balsamic vinegar and put it in the oven for a good 15 minutes while I cooked the penne. The penne was added to the roasted veggies and a good dollop of cottage cheese was added as the final touch...simply lovely. We had this at 12 this afternoon...


and by 2.00pm I was in the kitchen making "actual" lunch....we were starving so I whipped up some Nasi Lemak. I will put up the recipe of Nasi Lemak if I receive any request.

yummm roasted vegetables in Pasta, my favourite!! I love Balsamic Vinegar in anything. Must add the chesse like you next time.

Yeah give it a go bunny...it was lovely but just not enough to fill the stomach:-) Nice as a side dish.
